This is what the weather looks like outside my kitchen window this October Saturday morning
Pretty dreary. Perfect day for cozy cookie baking! I decided to bake some chewy gingersnaps for an afternoon snack for my family. Warning: these are the best Gingersnaps EVER. Possibly the best cookie ever (highly subjective, I know….but I still stand by it). A plate of these bad boys was devoured in less than 15 minutes by my family of three. You have been warned.
Pretty much the only thing I changed from the original recipe was to add freshly grated ginger.
very slightly adapted from That Skinny Chick Can Bake
1 cup brown sugar
3/4 cup butter
1/4 cup molasses
2 1/4 cup flour
2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp cloves
freshly grated ginger to taste (I added a ton)
1) Preheat oven to 375 degrees
2) Mix together sugar, butter, molasses, and egg
3) Stir in flour, baking soda, salt, cinnamon, gingers, and cloves.
4) Shape into balls and roll in sugar.
5) Bake for 8-10 minutes
I served them with Joy the Baker´s Spiced Almond Steamers. Perfection!
